When the Kilchoman distillery opened in 2005, it was the first new distillery on the Scottish island of Islay in 124 years. Kilchoman places a relatively high emphasis on regionality and craftsmanship. A portion of the barley used in production is grown near the distillery and kilned on its own malt floors. The
