Alcoholic fermentation takes place in concrete tanks with the vineyard's native yeasts, while malolactic fermentation, also spontaneous, occurs the spring after the harvest in 1,0001,600 liter wooden barrels. Aging continues in wood for about 18 months, without resorting to clarification or filtration. The result is a Nebbiolo that allows you to capture its most authentic characteristics
